【摘要】:1.1Theserequirementsapplytocommercialwood-firedovensintendedforusebycommercialestablishmentsforthepurposeofcookingorbakingfoodproductsutilizingsolidwoodfuel.Theseovensutilizeastheirprimaryenclosure,refractorymaterials.1.2Forthepurposesofthisoutline:a)Itisanticipatedtheovensdescribedin1.1willbeventedbyanexhausthoodascoveredbytheStandardforVentilationControlandFireProtectionofCommercialCookingOperations,NFPA96,oranexhausthoodtestedforcompliancewiththerequirementsintheStandardforExhaustHoodsforCommercialCookingEquipment,UL710.b)Minimumexhausthoodsizeincludingminimumheight,depth,andlengthofthehoodaswellasminimumhoodoverhangs,minimumexhaustairflows,andmaximumhoodheightabovetheovenshallbeestablishedaspartoftheinvestigation.c)Theseismicstabilityoftheovenandsupportsystemisnotanticipatedinthisdocument.1.3Thewood-firedbakingovensascoveredbytheserequirementsareintendedforinstallationinaccordancewiththeNationalElectricalCode,NFPA70,andothercodessuchastheBasicNationalMechanicalCode(BOCA),theStandardMechanicalCode(SBCCl),andtheUniformMechanicalCode(ICBO).TheexhausthoodsreferencedintheserequirementsareintendedforinstallationinaccordancewiththeStandardforVentilationControlandFireProtectionofCommercialCookingOperations,NFPA96.
